The Tastes of Przemyśl

Przemyśl – an ancient city on the San River. It holds many secrets, such as its historical streets, beautiful churches, and the Castle on the Hill with its breath-taking panorama of the city. Peace, quiet and freedom; rediscover them each time you visit, and yet still remain hungry for more.
    And then when you actually feel hungry, in Przemyśl you are sure to find a traditional and filling meal. Some of our local specialities cannot be found in other places, including gołąbki (cabbage rolls) made with potatoes, a distinction that is not to be found or recreated elsewhere in Poland! They are topped with a traditional onion sauce, which while not low on calories they ensure everyone who tries them returns for more. They can still be found in local restaurants, and some of the places we recommend for stuffing yourself with gołąbki are: the “C.K. Monarchia” restaurant, Przemyska Karczma, the “Słoik” milk bar and the “Rubin” bar. Should you, however, wish to experience the taste of Przemyśl-style gołąbki, feel free to use this simple and inexpensive recipe, and make them in your kitchen.

Gołąbki cabbage rolls with potatoes Przemyśl-style

Main ingredients
2 kg potatoes
4 average-size onions
1 white cabbage
200 ml oil
salt, pepper

Cream & onion sauce
2 average-size onions
500 ml cream (18%)
salt, pepper to taste
100 ml frying oil

Cabbage rolls
Scald the cabbage and cut out the hard parts of the leaves. Brown the onion. Grate the potatoes and place inside a saucepan, then add the browned onion. Mix to form the stuffing.
Simmer to evaporate the water, stirring continuously, then add salt and pepper.
Roll the stuffing in cabbage leaves, and arrange them tightly in the saucepan. Add water and cook on a low heat.
Sauce

Fry the onions, add the cream, salt and pepper. Fry for approx. 5 minutes.
